A Romantic Dinner!
The Way to a Man/Woman's Heart…
 
When friends ask for help in planning a romantic dinner, I advise them to make it special, but keep it simple. The special quality of the meal will make it memorable, and the simplicity will make it a success without stress. Use foods not part of your everyday diet, and which evoke exotic romantic images. Set the scene with a tablecloth, cloth napkins, fresh flowers, and candles. Arrange the food attractively on the plate and garnish with parsley.
 
Caviar on Buttered Water Crackers

Mixed Greens with Blue Cheese, Apples, and Toasted Walnuts
w/Vinaigrette Dressing
 
Filet Mignon with Mushrooms and Madeira Sauce
 
Tomatoes au Gratin
 
Baked or Microwave Potatoes, Butter and Sour Cream or Yogurt
 
Strawberries Splashed with Grand Marnier and Whipped Cream
 
 

 
Mixed Greens with Blue Cheese, Apples, and Toasted Walnuts w/Vinaigrette Dressing
  • Baby mixed greens, rinse and spin dry.
  • 10 whole walnuts. Place in the microwave on a napkin and cook on high for 40 seconds.
  • ½ apple, washed and cubed.
Toss the greens with the desired amount of your favorite vinaigrette dressing. Place the greens on two salad plates. Sprinkle with blue cheese, whole walnuts, and apple cubes. Serve immediately.
 
 

 
Filet Mignon with Madeira and Mushrooms
  • 3 oz. fresh mushrooms, washed and sliced thin.
  • 1 tbsp. minced shallot (optional)
  • 1 tbsp. butter
  • 1 ½ tsp. oil
  • salt and pepper
  • 2 filet mignon steaks, 1" thick. Pat dry with a paper towel.
  • 2 tsp. oil
  • 2 tbsp. Madeira (or red wine)
  • ¼ cup beef, chicken, or vegetable broth
  • 1 tsp. Wondra flour
Heat the butter and oil in a fry pan just large enough to hold the steaks. When the oil is hot, add the mushrooms and shallots and sauté until brown, about 6 minutes. Remove the mushrooms to a dish. Add the steaks and cook over high heat for about 1 minute and then reduce the heat to medium. Cook 3 minutes and turn and cook on the other side. When beads of red juice appear on the top, the meat is medium rare. Remove from the pan and keep warm.
 
Add wine and broth to the pan juices, bring to a boil and scrape the bottom of the pan to release the coagulated juices. Add the mushrooms and cook 1-2 minutes. Add the Wondra flour (other flour will clump), continue to simmer until the liquid thickens slightly. Taste and adjust flavoring with salt and pepper. Serve the filets topped with mushroom sauce.
 
 

 
Tomatoes Au Gratin
  • 1 medium tomato
  • 1 tsp. olive oil
  • 1 tsp. parmesan cheese
  • ¼ tsp. dried Italian herbs
  • minced garlic
Cut the tomato in half around the equator. Gently squeeze out the seeds. Sprinkle the top of the tomato with herbs, garlic, and cheese. Drizzle olive oil on top. Place them on a foiled and lightly oiled cookie sheet. Bake at 350 degrees for 10-15 minutes.
 
 

 
Strawberries and Grand Marnier
  • strawberries for two
  • sugar
  • ¼ cup Grand Marnier
  • whipped cream
  • garnish: two mint leaves, slender pieces of chocolate, or cookie.
Make the day of the dinner. Remove the stem, wash and dry the strawberries. If large, cut them in half. Place in a wide bowl. Sprinkle with a little sugar, if desired. Add the Grand Marnier and toss to cover. Refrigerate until ready to serve.
 
To serve, spoon strawberries and liquid into red wine glasses and top with whipped cream. Decorate with the garnish.
